Cook jacket potato with ‘super crispy’ skin in under 20 mins with chef’s ‘smush’ method

As comfort food goes, an old-fashioned jacket potato is hard to beat, especially when it's topped with tasty fillings.

Chef Poppy O’Toole has shared the "delicious" way she cooks a jacket potato and her top tips for achieving crispy skin.

Poppy said: "I love a jacket potato, it's especially good when you don't know what you're going to have for lunch or dinner as it's super quick to make."

But before placing it in the oven or air fryer, you need to "smush" the potato.

"Doing it this way is really tasty because you get super crispy outside and super fluffy inside," she explained to The Mirror.

"I like to add spices and garlic and all these different bits as well, that's my go-to jacket potato simply because it's filling, it's cheap and you can put any topping on it.

"You can also do that with any other meal you're prepping because you can use any kind of potato and it's going to be delicious."

To make Poppy's "smushed" jacket potato, start by microwaving a potato for 10 minutes until it's almost cooked.

Put it on a tray or "smush" or "smash" the potato with the bottom of a glass to gently break the potato skin.

Next, add oil or melted butter and any herbs of choice, before baking it in the oven or air fryer for 10-15 minutes to get a crispy skin.

If you prefer a traditional jacket potato, you can cook it in the air fryer.

Sharing a video on TikTok, Poppy said: "I’ve been listening to your guys, and I know you want quicker, cheaper, more energy-efficient recipes and I know a lot of you are using air fryers. Here's my ‘how to’ for the perfect air fryer jacket potato.

"First of all, get some big potatoes, I’ve got large Maris Piper, I’m going to pierce with a fork all over, get some oil all over and sprinkle with salt.

"Into the air fryer for 170 degrees Celsius for 20 minutes, then give them a little check, then back in at 200 degrees Celsius for 15 minutes.

"So it takes 35 minutes to get this cheap, easy, crispy, golden, fluffy jacket potato on the table."
